Very Delicious Gingerbread Recipes for Christmas 2012

It is eaten at tea time or at parties with foie gras; Gingerbread has the advantage of matching with both salty and sweet foods. On the occasion of Christmas, the family gathers and it’s time to show your guests your creativity in cooking. These easy yet very tasty gingerbread recipes will help you add to your Christmas table your unique touch.

1- Gingerbread Truffles:

Don’t worry, it is not because there is gingerbread in these truffles that chocolate would be absent!

Ingredients for 4 persons:

• 6 slices of gingerbread (125 g)
• 1 cup espresso or strong coffee (10 cl)
• 25 g candied orange peel
• 60 g of dark chocolate

Steps:

  1. Cut the gingerbread into pieces, and mix them into coarse crumbs. Pour the coffee into a bowl and mix with the crumbs with a fork to get a smooth paste. Stir in diced candied peel. Keep it 15 minutes in the freezer.
  2. Shred the chocolate on a plate. Using 2 teaspoons take 12 pieces of the paste you’ve already made, each paste in the volume of a hazelnut, and shape them into balls with your hands. Roll them in the chocolate. Keep them fresh until the last moment. Serve with coffee.

2- Gingerbread with foie gras and Ducks:

Ingredients for 4 persons:

• 2 gingerbread
• about 140 g of foie gras, medium cooked
• 1 smoked duck breast
• 1 lemon
• 80 g butter, softened
• 2 tbsp chopped parsley
• 2 tbsp chopped almonds
• Chili pepper

Steps:

  1. Remove the crust of the gingerbread, and slice it into square pieces.
  2. Keep half of the gingerbread slices to use as a covering.
  3. Wash the lemon, take its zest and chop it. Thinly slice the duck. Mix the butter with parsley, 2 pinches of pepper and lemon zest. Spread on half of the gingerbread slices this mixture, then add to each slice a slice of duck. Cover with another slice of gingerbread.
  4. Spread on the rest of the gingerbread slices the foie gras and chopped almonds. Cover with a slice of gingerbread.
  5. Keep in the fridge before serving.

3-Gingerbread Tiramisu:

Ingredients for 4 persons:

• 150 g of gingerbread
• 4 eggs
• 200g mascarpone
• 10 cl of liquid cream
• 4 sheets of gelatin
• 60 g sugar
• 20 cl of strong coffee

Steps:

  1. Put the gelatin sheets in cold water. Boil the fresh cream. Squeeze the gelatin by your hands and stir in the cream off the heat. Cool this mixture and then add the mascarpone and whisk.
  2. Whisk the egg yolks with the sugar until it whitens. Stir in the mascarpone mixture.
  3. Whip the egg whites until they stiff and fold into the above mixture.
  4. Toast the gingerbread and cut it into cubes and sprinkle with coffee.
  5. Arrange the cream in cups, then the gingerbread and finish with a layer of cream. Keep the tiramisu cups 3 hours in the refrigerator before serving.
